Abstract: Cookies are bakery products rich in fat and sugars. Cookies were developed using lotus stem powder (LSP) incorporated with refined flour at various levels of incorporation. The attributes odor, color, flavor and crunch of the cookies were determined. This study aimed at developing cookies with partial replacement (Standard-0%, R1-25%, R2-50% and R3-75%) of refined flour with Lotus stem powder for preparation of cookies. Lotus Stem powder incorporated cookies was developed keeping in mind the nutraceutical properties of ingredients incorporated (Lotus stem Powder, Refined wheat flour, sugar, and baking soda). Nutritional analysis of was done (AOAC 2011) and all the nutrients of cookies was estimated. It was clearly shown in the table that moisture 3.370±1.49g, carbohydrate 86.56±1.48g, protein 1.02±0.11g, fat 9.01±0.20g, fibre 6.475±0.25g, ash 0.03±0.075mg, iron1.908±0.10mg, phosphorus 13.63±0.13mg and potassium 94.27±0.19mg weremore in treatments as compared to control T0. Thus it is concluded that cookies developed by incorporating lotus stem powder have good nutritional value.
